I believe good service starts with two things preparation & respect.
Respect for the ingredients, respect for your time, and respect for the budget. Whether I am consulting for a restaurant in transition or plating a lunch for a Fortune 500 executive, the standard is the standard. It doesn’t waver.
People often ask me what kind of chef I am.If you look at my resume, you’ll see the professional kitchens, the volume catering, and the operational consulting. But if you look at my kitchen table at home, you’ll just see family.
I believe that food is the oldest form of communication we have. It’s how we close a deal in the boardroom, it’s how we celebrate a milestone, and it’s how we comfort loved ones when words fail us.
